Abstract: Routine inspection of ovine lymph glands during meat inspection is not practised in New Zealand. In view of the prevailing system of dressing ovine carcasses (high-speed chains processing carcasses at a rate of 6-8 per minute) incising glands would be physically nearly impossible. The present system of inspecting ovine carcasses is by viewing and palpating, followed by incising when warranted. One could therefore ask whether this method of inspection is satisfactory, as incising of specified lymph glands in the other food animals, that is cattle and pigs, is done routinely
