Abstract: Food safety, in particular the safety of food derived from farmed animals, has been 'under the spotlight' in recent years, and will continue to be so for some time to come. The BSE epidemic in the UK, and its possible link with new variant CJD, has been at the centre of public concern, however internationally, there have also been outbreaks of human disease due to Salmonella typhimurium DT104, S. enteritidis and Escherichia coli 01 57, in some instances resulting in deaths.
